Roasted Pumpkin Seeds


Now lets talk about what you do with the seeds. Eating pumpkin seeds can boost your mood, and they help lower your LDL (bad cholesterol) and protect your heart ❤️.

Don't worry about separating the seeds from the guts when you scrape the insides out of your pumpkin. Place seeds and guts in a bowl and place in the sink. Fill the bowl with water and let sit for a few minutes. The seeds will float and the guts will sink. You then can take out all of the guts. You will still have to separate some seeds from guts, but its a lot easier this way than when you first take them out of the pumpkin.

Allow the seeds to soak in water for like 30 minutes. Preheat the oven to 400 degrees F. Scoop the seeds out of the water and place them on a baking sheet. Pat them with a paper towel to remove excess water. (Optional: coat with a very small amount of avocado oil, about a tbsp to aide in the roasting process) Bake for 10-20 minutes, until the seeds are roasted and have turned a light brown color.

Allow to cool and enjoy!!
